I used my favorite herb, dill, though chives would be great here too. You can easily tweak this loaf depending on your preferences, or whatever is available.

Ingredients for one loaf, the standard length in France is 27 cm long, though a slightly smaller tin would be even better here. In another bowl, whisk together the eggs, oil, milk kefir, zest and juice of the lemon. Add the dry ingredients to the wet ingredients, and stir until the dry ingredients are just incorporated. Finally, fold in the trout and dill.

Bake for minutes, or until the point of a knife comes out clean. Wait 10 minutes before removing the loaf from the tin.

Let it cool to room temperature before cutting into thick slices. I was probably mislead by the way the cake looks in the amuse-bouches photo, where it seems to be fluffy, almost muffin-like. Also, since the spinach weight is accurate, then I should try chopping the spinach less coarsely.
