That makes my Persian cooking very authentic.
I will not be borrowing this cook book to anyone again because I do not want to lose this one like I did the first one. I ordered this cook book as used, so I could get it cheaper and the book came to me in very good condition. I could hardly tell that it was used previously. Very satisfied with my purchase. One person found this helpful.
This was the third book I ordered to gift a cousin, my daughter and her sister-in-law. I had been given the book as a gift by a dear friend more than 30 years ago and I still use it to guide me today; specially when it comes to dishes with specific herbs. This book has been in publication for over 40 years. Showed it to my Persian professor and she wants a copy too. It's how I learned to make Ta Chin sp?
Pioneering book that introduced America to Persian cooking in the s. A favorite recipe is roast chicken stuffed with dried fruit, seasoned with cinnamon and saffron. The author understood how to "translate" the recipes for use in an American context what is found in stores, how to adapt the recipes, etc , but be aware that recipes that call for eggplants require smaller, oriental eggplants, not the much larger ones usually found in American grocery stores. I love this book and the stories she shares and the recipes are reasonably close to the actual personal experience.
As a young married person outside of Iran to a lovely Chilean lady, this was a life saver as neither one of us knew how to cook anything let alone Persian. This saved our bacon deliciously.
I bought one for each one of three children as they were raised with many of the food in this book and I am sure they will remember it well. It remains relevant and easy to follow. I buy a copy for everyone who enjoys my recipes. This was my first Persian cookbook after returning from living there as an exchange student long ago. It's good introduction to the recipes of their great cuisine. I wore out my first copy. While it doesn't present recipes with all the complexities that Persian cooks can employ, the recipes are well balanced, simpler and more everyday.
They are very close to what my host mother cooked. Master the method for cooking Persian rice with crisp tadig on the bottom, and you won't go back to how you made rice before. I chose this book so that I could share it with my daughters. I originally bought a hard back copy almost 30 years ago. I enjoyed the recipes and stories within it's covers for many years.
The recipes are as delicious as the ones my husband's family prepares on a daily basis. My husband's family are also from Azerbaijan state in Iran and when I originally found this cookbook I was delighted to finally be able to prepare the same delicious meals that my new family did. I also enjoy the stories and knowledge of the region that the author writes about. This is a book that I can pass down to my children so that they can better understand their father's culture.

Paperback , pages. Published December 12th by Tuttle Publishing first published I have been fortunate enough to watch two Persian women cook and eat the fruits of their labor.
This cookbook seems to closely resemble the way they cooked. However, I doubt I would have been able to replicate their efforts simply from reading this book as there is little precedence from which to measure my dishes. Nonetheless, if you are interested in experiencing something different in the culinary world I highly recommend noshing on some Persia Persian cooking is highly underrated.
